- 1 Kg butter
- 1 kg castor sugar
- 0.25 kg fresh ginger, grated
- 0.025 kg baking powder
- 0.05 kg baking soda
- 0.25 kg honey
- 1.75 kg flour

Ginger Cookies are aptly named, as they are both ginger colored and ginger flavored. They have a sugar coated crackly surface, and when you bite into one you will find the texture soft and chewy with a flavor that is buttery and spicy. The combination of molasses with ground cinnamon, ground ginger, and cloves makes eating one just about impossible.
Preparation
- Cream butter and sugar
- Add honey and ginger
- Sieve together flour, baking powder and baking soda
- Add in this flour mixture
- Fold in lightly and do not over mix
- Chill it overnight, roll out and cut in desired shapes
- Bake at 180 C till golden brown
