- 1 kg black beans (boiled) ,For refried Beans
- 150 gram tomato (diced)
- 150 gram onion (diced)
- 100 gram bell pepper (diced)

Mexican Pizzas are delicious corn tortillas topped with beans, beef and all the delicious taco toppings you can imagine! They can be cut into wedges and served as an appetizer or left whole and served as a main dish.
Preparation
- Deep fry the tortilla till golden brown
- Spread the re-fried beans, pico de gallo, diced bell peppers over the tortilla
- Garnish is with grated mozzarella cheese and orange cheddar cheese
- Bake it in the oven for 10 minutes at 180 degrees
- Finish the Mexican pizza with lettuce and chipotle dressing
- Prepare Pico De Gallo
- Combine tomatoes, onions, green chillies, coriander in a bowl
- Season with salt and lemon juice
- Prepare refried beans
- Heat oil in a skillet over medium heat
- Saute the onion, capsicum and tomato till done
- Stir in the black beans and salt and cook till the beans are thoroughly heated
